Recipe: High Protein Baked Oatmeal Cups

Baked Oatmeal Muffin Cups

Get ready to whip up a scrumptious protein-baked oatmeal in a muffin tray to make it even easier to eat on the go (or sitting with a baby like I do :P)

Here’s what you need:

  • 2 cups old-fashioned rolled oats (I like Bob’s Red Mill)

  • ½ cup vanilla protein powder (I like Equip Prime Vanilla Protein- you can get a 15% discount with the code “BLOOM15”)

  • 2 cups unsweetened almond milk (or any dairy-free milk)

  • ¼ cup peanut butter (or any nut butter)

  • 2 large eggs 

  • ½ teaspoon baking powder

  • ¼ teaspoon salt

  • OPTIONAL: 1-2 cups fresh blueberries, dried cranberries, or chocolate chips

Here’s what you do:

  1. Preheat your oven to 375°F and spray a muffin tin (I like this silicon one) with cooking spray.

  2. In a big bowl, combine old-fashioned rolled oats, vanilla protein powder (Equip Prime Vanilla Protein is my fav), unsweetened almond milk (or any dairy-free milk), peanut butter (or your favorite nut butter), eggs, baking powder, and salt. Mix it all together until well combined.

  3. Next, add in any optional add-ins you’d like (like blueberries or chocolate chips, both, or anything else that lights you up!). Pour the oatmeal mixture into the prepared Muffin tray. 

  4. Feel free to sprinkle some extra blueberries or chocolate chips on top for an extra burst of flavor.

  5. Bake this goodness for about 35-40 minutes until the center is set and the smell fills your kitchen. Once it's done, remove it from the oven and let it cool for a few minutes.

  6. Now comes the best part - pop ‘em out and serve ‘em up with a drizzle of your favorite nut butter or some honey. It's the perfect way to start your day or enjoy as a wholesome breastfeeding snack.
